  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups low sodium chicken broth
  • 8 ounces egg noodles
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup evaporated milk (or heavy cream for richer texture)
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 5 to 7 minutes.
  4. Pour in the chicken broth. Add the dried thyme, salt, and pepper. Bring the mixture to a boil.
  5. Add the egg noodles and return the soup to a gentle boil. Cook according to noodle package directions, usually 6 to 8 minutes, until the noodles are tender.
  6. Return the cooked chicken to the pot. Reduce the heat to low.
  7. Stir in the evaporated milk, lemon zest, and lemon juice. Heat through gently for 2 minutes; do not let the soup boil after adding the milk.
  8. Taste and adjust seasoning if needed. Stir in the fresh parsley before serving.

Notes

  • For a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water to create a slurry, then stir it into the simmering broth before adding the noodles.
  • Use fresh lemon zest and juice; bottled juice changes the flavor profile.
  • If you prefer shredded chicken, cook the chicken breasts whole in the broth until done, then remove, shred, and return them to the soup before adding the milk.
