4 cups water or vegetable broth
1 cup instant or quick-cooking polenta
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
1 cup fresh spinach, roughly chopped
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup heavy cream (optional, for extra richness)
Instructions
Pour the water or broth into a medium saucepan and bring it to a boil over medium-high heat.
Once boiling, slowly whisk in the polenta in a steady stream to prevent lumps. Continue whisking for about one minute until combined.
Reduce the heat to low. Stir in the salt and pepper. Cover the pot and let it cook for the time specified on your polenta package (usually 5 to 10 minutes for quick-cooking polenta), stirring occasionally to keep it smooth.
Remove the pot from the heat. Stir in the butter until it melts completely.
Add the chopped spinach and stir until the spinach wilts into the polenta, which should take about 1 to 2 minutes.
Stir in the Parmesan cheese and heavy cream, if using. Mix well until the polenta is creamy and the cheese is fully incorporated.
Taste and adjust salt and pepper if needed. Serve immediately with extra Parmesan cheese on top.
Notes
For a richer flavor, substitute half of the water with chicken broth.
If you do not have heavy cream, you can use whole milk, but the texture will be slightly less rich.
This polenta thickens as it cools. If you need to reheat it, add a splash of water or broth and stir well over low heat.
