1 medium yellow onion, chopped
2 carrots, peeled and sliced
2 celery stalks, sliced
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
6 cups vegetable broth
1 (14.5 ounce) can diced tomatoes, undrained
1 (15 ounce) can cannellini beans, rinsed and drained
1/2 cup grated Parmesan cheese, plus more for serving

Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
Add the minced garlic, Italian seasoning, basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
Pour in the vegetable broth and add the diced tomatoes (with their juice) and the rinsed cannellini beans. Bring the mixture to a simmer.
Once simmering, add the refrigerated tortellini to the pot. Cook according to package directions, usually about 5 to 7 minutes, until the tortellini float and are cooked through.
Stir in the fresh spinach until it wilts completely, which takes about 1 to 2 minutes.
Reduce the heat to low. Stir in the heavy cream and the grated Parmesan cheese until the soup is creamy and heated through. Do not boil after adding the cream.
Taste the soup and season with salt and black pepper as needed.
Serve immediately with extra Parmesan cheese on top.
Notes
For a vegetarian version, confirm your vegetable broth is meat-free.
If you prefer a thicker soup, mix 1 tablespoon of all-purpose flour with 2 tablespoons of cold water to create a slurry, then stir it into the simmering broth before adding the tortellini.
You can substitute frozen tortellini, but adjust the cooking time slightly.
For added flavor, use chicken broth instead of vegetable broth.
