Follow this recipe to make exceptionally crunchy, pub-style onion rings that stay crisp.

  • 2 large yellow onions
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup ice-cold club soda or seltzer water
  • Vegetable oil, for frying

Instructions

  1. Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and place them in a bowl of ice water for 15 minutes. Drain thoroughly and pat them completely dry with paper towels. This step removes moisture, which helps crispness.
  2. In a medium bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper.
  3. Pour the ice-cold club soda into the dry ingredients. Whisk briefly until just combined. Do not overmix; a few lumps are fine. The cold liquid creates steam when frying, leading to a crispier coating.
  4. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 375°F (190°C). Use a thermometer to monitor the temperature.
  5. Working in small batches, dip the dried onion rings into the batter, allowing excess to drip off.
  6. Carefully place the battered rings into the hot oil, ensuring they do not touch. Fry for 2 to 3 minutes, turning occasionally, until they are deep golden brown and crisp.
  7. Remove the rings with a slotted spoon and place them immediately on a wire rack set over a baking sheet to drain excess oil. Do not place them on paper towels, as this traps steam and makes them soggy.
  8. Sprinkle lightly with salt immediately after draining. Serve hot.

Notes

  • For the crispiest results, ensure your batter ingredients, especially the club soda, are very cold.
  • Maintain the oil temperature between 365°F and 375°F. If the oil is too cool, the rings absorb too much oil and become greasy.
  • If you prefer an air fryer method, lightly spray the battered rings with cooking spray and cook at 400°F (200°C) for 10-12 minutes, flipping halfway, until golden.
