A delightful and lighter take on traditional chili, this Overnight Turkey & Veggie Chili is packed with fresh summer vegetables like zucchini, corn, and tomatoes, balanced with lean ground turkey. It offers a comforting yet healthy meal perfect for the transition from summer to fall.

  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium zucchini, diced
  • 1 cup frozen or fresh corn kernels
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (8 ounce) can tomato sauce
  • 1 cup low-sodium chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion and bell peppers to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the diced zucchini and corn kernels. Cook for another 3-5 minutes until the zucchini is slightly tender.
  5. Pour in the diced tomatoes, rinsed beans, tomato sauce, and broth.
  6. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using).
  7. Bring the chili to a simmer, then reduce the heat to low, cover, and cook for at least 30 minutes, or up to several hours, stirring occasionally. The longer it simmers, the more the flavors will meld.
  8. Season with salt and black pepper to taste before serving.

Notes

  • For a thicker chili, you can mash some of the beans against the side of the pot.
  • Serve with your favorite toppings like shredded cheese, sour cream, avocado, or chopped cilantro.
  • This chili can be made ahead of time and reheats beautifully, making it perfect for meal prep.
