Instructions

  1. Prepare your jars and lids for canning.
  2. In a large pot, combine the chopped peaches, granulated sugar, and lemon juice.
  3. Stir in the powdered fruit pectin.
  4. Bring the mixture to a rolling boil over high heat, stirring constantly.
  5. Boil for 1 minute, still stirring.
  6. Remove the pot from the heat.
  7. Skim off any foam with a spoon.
  8. Ladle the hot jam into prepared jars, leaving 1/4 inch headspace.
  9. Wipe the rims of the jars clean and screw on the lids.
  10. Process the jars in a boiling water bath for 10 minutes.
  11. Remove jars from the canner and let them cool completely on a towel-lined counter.
  12. Check for seals, then store the jam in a cool, dark place.
