- 1 pound ripe tomatoes, cut into wedges
- 2 ripe peaches, pitted and sliced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh basil leaves, torn
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard

- 4 cups day-old crusty bread, cubed
