One Pan Pineapple Chicken and Rice

Make this easy, savory, and slightly sweet pineapple chicken and rice dish in one pan for simple cleanup.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 1 (14.5 ounce) can chicken broth
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1 cup fresh or canned pineapple chunks, drained (reserve juice for liquid measurement)
  • 1/2 cup frozen peas
  • 2 green onions, sliced, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook until browned on all sides, about 5 minutes. Remove chicken from the skillet and set aside.
  2. Add the chopped onion and red bell pepper to the same skillet. Cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the uncooked rice, chicken broth, reserved pineapple juice, soy sauce, brown sugar, and ground ginger. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the skillet, and simmer for 15 minutes without lifting the lid.
  5. Remove the skillet from the heat. Gently stir in the cooked chicken, pineapple chunks, and frozen peas. Replace the lid and let it stand for 5 minutes to allow the rice to finish steaming and the peas to heat through.
  6. Fluff the rice mixture gently with a fork. Garnish with sliced green onions before serving.

Notes

  • If you use canned pineapple, use the juice from the can to measure out the required 1/2 cup of liquid, supplementing with water or extra broth if needed.
  • For a tangier flavor, add 1 teaspoon of rice vinegar when you add the soy sauce.
  • You can substitute brown rice, but you will need to increase the cooking time by about 15-20 minutes and add more liquid.
