  • 2 cups cooked day-old jasmine rice
  • 1 tablespoon vegetable oil
  • 8 ounces boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1/2 cup diced yellow onion
  • 1 cup fresh pineapple chunks
  • 1/2 cup frozen peas and carrots mix
  • 2 large eggs, lightly beaten
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/4 cup cashews, toasted (optional)
  • 2 scallions, sliced, for garnish
  • 1/2 fresh pineapple, hollowed out for serving (optional)

Instructions

  1. Heat the vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 4-5 minutes. Remove the chicken and set it aside.
  3. Add the minced garlic and onion to the wok. Stir fry for 1 minute until fragrant.
  4. Push the vegetables to one side of the wok. Pour the beaten eggs into the empty space and scramble until just set. Break the eggs into small pieces and mix with the vegetables.
  5. Add the day-old rice to the wok. Break up any clumps with your spatula. Stir fry for 2 minutes.
  6. Return the cooked chicken to the wok. Add the pineapple chunks, peas, and carrots. Stir fry for 1 minute.
  7. In a small bowl, whisk together the fish sauce, soy sauce, sugar, and white pepper. Pour the sauce mixture over the rice.
  8. Stir fry everything together quickly for 1-2 minutes until the rice is heated through and well coated.
  9. Stir in the toasted cashews, if using.
  10. Serve immediately, garnished with sliced scallions. If you hollowed out a pineapple, serve the rice inside the shell.

Notes

  • Use cold, day-old rice; fresh rice will become mushy when stir-fried.
  • For best flavor, use fresh pineapple chunks rather than canned.
  • If you want a slightly smoky flavor, cook the rice over very high heat, allowing some grains to lightly char.
  • Add 1 teaspoon of curry powder with the sauce for a different flavor profile.
