Learn how to make a tender and juicy pork loin roast using simple ingredients and clear oven temperatures, perfect for a weeknight meal or Sunday roast.

Ingredients

Scale
  • 3 lb pork loin roast, trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the pork loin roast dry with paper towels. This helps create a good crust.
  3. In a small bowl, mix together the salt, pepper, garlic powder, thyme, and paprika.
  4. Rub the olive oil all over the pork loin roast.
  5. Sprinkle the spice mixture evenly over the entire roast, pressing gently so it sticks.
  6. Place the seasoned pork loin roast in a roasting pan or on a rimmed baking sheet.
  7. Roast at 400 degrees Fahrenheit for 15 minutes.
  8. Reduce the oven temperature to 350 degrees Fahrenheit. Continue roasting until the internal temperature reaches 145 degrees Fahrenheit on a meat thermometer, which usually takes about 20 to 25 minutes per pound.
  9. Remove the roast from the oven when it hits 145 degrees Fahrenheit.
  10. Tent the roast loosely with foil and let it rest on a cutting board for at least 10 minutes before slicing. This resting time is key for a juicy pork loin.
  11. Slice against the grain and serve with pan juices or your favorite pan sauce gravy.

Notes

  • For extra flavor, you can rub the roast with minced fresh garlic before applying the oil and spices.
  • If you want a quick pan sauce, pour off excess fat from the roasting pan, place the pan over medium heat on the stovetop, add 1 cup of broth, and scrape up the browned bits from the bottom. Let it simmer until slightly reduced.
  • Use a reliable meat thermometer to check the pork loin internal temp for perfect results every time.
