Ingredients
Scale
4 pork shoulder steaks (about 1 inch thick)
1/2 cup low sodium soy sauce
1/4 cup packed brown sugar
4 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon ground black pepper
1/2 teaspoon onion powder
Pinch of red pepper flakes (optional)
Instructions
Prepare the marinade: In a medium bowl, whisk together the soy sauce, brown sugar, minced garlic, vegetable oil, black pepper, onion powder, and red pepper flakes if you are using them.
Place the pork steaks in a large zip-top bag or a shallow dish. Pour the marinade over the steaks, making sure they are fully coated.
Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, for the best flavor. This step is key for juicy pork steak.
Preheat your grill to medium-high heat (about 400 degrees F) or preheat your oven to 400 degrees F if baking. Lightly oil the grates or a baking sheet.
Remove the steaks from the marinade, letting excess drip off, but do not wipe them dry. Discard the remaining marinade.
For Grilling: Place the steaks on the preheated grill. Cook for 5 to 7 minutes per side, until the internal temperature reaches 145 degrees F.
For Baking: Place the steaks on the prepared baking sheet. Bake for 20 to 25 minutes, flipping halfway through, until the internal temperature reaches 145 degrees F.
Let the grilled or baked pork steaks rest on a cutting board for 5 minutes before serving.
Notes
For the juiciest results, always use a meat thermometer to check for doneness. The safe internal temperature for pork is 145 degrees F followed by a three-minute rest.
If you are grilling, baste the steaks lightly with a little reserved marinade (that has not touched raw meat) during the last few minutes of cooking for extra glaze.
This sweet soy pork steak marinade works great with other cuts, too, like thick-cut pork chops.
