Slow Cooker Pork Shoulder Stew with Root Vegetables

Make a tender and hearty pork stew using your slow cooker. This recipe uses pork shoulder and root vegetables for a comforting meal.

  • 3 lbs pork shoulder, cut into 1 1/2 inch cubes
  • 1 large onion, chopped
  • 4 carrots, peeled and cut into 1 inch pieces
  • 3 celery stalks, chopped
  • 1 1/2 lbs potatoes, peeled and cubed
  • 4 cups beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for thickening)

Instructions

  1. Place the cubed pork shoulder, onion, carrots, and celery into the slow cooker insert.
  2. Pour the beef broth and red wine (if using) over the vegetables and pork.
  3. Stir in the Worcestershire sauce, thyme, salt, and pepper.
  4. Cover and cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours, until the pork is very tender.
  5. Add the cubed potatoes during the last 1 1/2 hours of cooking time.
  6. About 15 minutes before serving, stir the cornstarch slurry into the stew. Stir well and let it cook until the gravy thickens.
  7. Serve hot.

Notes

  • For a richer flavor, brown the pork cubes in a skillet before adding them to the slow cooker.
  • If you prefer a gluten-free stew, skip the cornstarch slurry and thicken with a gluten-free flour blend or simply serve as a thinner broth.
  • This stew freezes well for future meals.
