Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 (15 ounce) can pumpkin puree
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/2 cup breadcrumbs
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish.
  2. Cook the macaroni according to package directions until al dente. Drain well and return to the pot.
  3. In a large bowl, whisk together the pumpkin puree, milk, and heavy cream.
  4. Add the cheddar cheese, Gruyere cheese, and Parmesan cheese to the pumpkin mixture. Stir until the cheese is melted and the sauce is smooth.
  5. Stir in the butter, salt, pepper, nutmeg, and cinnamon.
  6. Pour the cheese sauce over the cooked macaroni and stir to combine.
  7. Transfer the macaroni and cheese mixture to the prepared baking dish.
  8. In a small bowl, combine the breadcrumbs with the melted butter. Sprinkle evenly over the macaroni and cheese.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the bake is bubbly.
  10. Let it rest for a few minutes before serving.

Notes

  • For an extra touch of fall flavor, you can add a pinch of ground cloves or allspice.
  • If you prefer a crispier topping, you can broil the mac ‘n’ cheese for the last 1-2 minutes, watching carefully to prevent burning.
  • Feel free to experiment with different cheese combinations, such as Monterey Jack or Colby.
