  • 1/2 cup brewed strong coffee, cooled
  • Cream cheese frosting
  • Extra pumpkin pie spice for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, pumpkin pie spice, cinnamon, ginger, and cloves.
  3. In a separate bowl, mix the pumpkin puree, softened butter, vegetable oil, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Gradually add the cooled coffee to the batter, mixing until smooth.
  6. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, frost the cupcakes with cream cheese frosting.
  10. Dust the tops with a little extra pumpkin pie spice.
