Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • For the Honey Garlic Sauce:
  • 1/2 cup low sodium soy sauce
  • 1/3 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cornstarch mixed with 2 teaspoons cold water (slurry)
  • Optional: Red pepper flakes for heat

Instructions

  1. Season the cut chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large skillet or pan over medium-high heat. Add the chicken and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the broccoli florets to the same skillet. Sauté for 3-4 minutes until they start to become tender-crisp. If the pan seems dry, add a splash of water to help steam them slightly.
  4. While the broccoli cooks, whisk together the soy sauce, honey, minced garlic, and grated ginger in a small bowl.
  5. Pour the sauce mixture over the broccoli in the skillet. Bring the sauce to a simmer.
  6. Return the cooked chicken to the skillet. Stir everything together to coat the chicken and broccoli evenly with the sauce.
  7. Pour the cornstarch slurry into the simmering sauce while stirring constantly. The sauce will thicken quickly. Cook for 1 minute until the sauce is glossy and coats the back of a spoon.
  8. Taste the dish and add red pepper flakes if you want some spice. Serve immediately over rice or noodles for a complete meal.

Notes

  • For an even easier cleanup, prepare this as a Sheet Pan Chicken and Broccoli by roasting everything on a baking sheet at 400°F (200°C) for 15-20 minutes, then tossing with the sauce after baking.
