  • 3 pounds pickling cucumbers
  • 3 cups white vinegar
  • 3 cups water
  • 3 tablespoons kosher salt
  • 3 tablespoons sugar
  • 6 cloves garlic, smashed
  • 3 sprigs fresh dill
  • 1 teaspoon black peppercorns

Instructions

  1. Wash cucumbers thoroughly. Trim the blossom ends.
  2. In a large pot, combine vinegar, water, salt, and sugar. Bring to a boil, stirring until salt and sugar dissolve.
  3. Pack the cucumbers into clean jars. Add smashed garlic cloves, dill sprigs, and peppercorns to each jar.
  4. Pour the hot brine over the cucumbers, ensuring they are fully submerged. Leave about 1/2 inch of headspace.
  5. Let the jars cool to room temperature on the counter.
  6. Seal the jars and refrigerate. Pickles will be ready to eat in 24-48 hours.
