1 lb large shrimp, peeled and deveined
2 bell peppers (any color), sliced
1 large red onion, sliced
2 tablespoons olive oil
1 lime, juiced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional toppings: Tortillas, salsa, avocado, sour cream
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a medium bowl, combine the shrimp, sliced peppers, and sliced onion.
In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper to create the marinade.
Pour the marinade over the shrimp and vegetables. Toss everything gently until evenly coated.
Spread the shrimp and vegetables in a single layer on the prepared baking sheet. Do not overlap them.
Bake for 10 to 12 minutes, or until the shrimp is pink and cooked through.
Serve immediately with your choice of tortillas or over rice for a healthy shrimp bowl.
Notes
For extra flavor, you can add 1/2 teaspoon of garlic powder to the marinade mixture.
If you prefer a spicier dish, add 1/4 teaspoon of cayenne pepper to the seasoning mix.
To make this a low-carb option, skip the tortillas and serve the fajita mix over lettuce wraps or cauliflower rice.
