4 large carrots
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice wine vinegar
1 tablespoon lime juice
1 teaspoon sesame oil
1 teaspoon honey or maple syrup
1/2 teaspoon grated fresh ginger
1/4 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds
1 green onion, thinly sliced (for garnish)
Instructions
Prepare the carrots: Peel the carrots. Using a vegetable peeler, carefully shave the carrots into long, thin ribbons. Stop when you reach the core. Discard the core or save it for stock.
Place the carrot ribbons into a medium bowl.
Make the dressing: In a small bowl, whisk together the soy sauce, rice wine vinegar, lime juice, sesame oil, honey (or maple syrup), grated ginger, and red pepper flakes, if using. Mix until the honey is dissolved.
Pour the dressing over the carrot ribbons. Toss gently to coat all the ribbons evenly.
Let the salad sit for 5 minutes. This allows the carrots to soften slightly and absorb the dressing flavor.
Just before serving, sprinkle with toasted sesame seeds and sliced green onion. Serve immediately for the best crunch.
Notes
For the best ribbon texture, use a standard vegetable peeler rather than a julienne peeler.
If you are making this ahead of time, keep the carrots and dressing separate and toss them right before serving to maintain maximum crispness.
