- 1 box (15.25 oz) red velvet cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup white chocolate chips
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, combine the red velvet cake mix, vegetable oil, and eggs. Mix until just combined into a thick dough. Do not overmix.
- Stir in the white chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 9 to 11 minutes, or until the edges are set but the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.
Notes
- For a crinkle effect, roll the dough balls in powdered sugar before baking.
- If you prefer a slightly firmer cookie, bake for an additional 1 to 2 minutes.
- Store cooled cookies in an airtight container at room temperature for up to 5 days.
