- Preheat your oven to 400 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, 3/4 cup sugar, baking powder, and salt.
- In a separate medium bowl, whisk the melted butter, egg, milk, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the chopped rhubarb until evenly distributed in the batter.
- In a small bowl, mix the 1/4 cup sugar and 1 teaspoon cinnamon for the topping.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Sprinkle the cinnamon sugar mixture generously over the top of each muffin batter portion.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For the best texture, do not overmix the batter after adding the wet ingredients to the dry.
