2 lbs Yukon Gold or small red potatoes, quartered
1 whole head of garlic
4 tablespoons unsalted butter, melted
3 tablespoons olive oil
1/2 cup grated Parmesan cheese, plus extra for topping
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
Instructions
Preheat your oven to 400°F (200°C).
Roast the garlic: Slice about 1/4 inch off the top of the whole garlic head to expose the cloves. Drizzle with 1 teaspoon of olive oil, wrap tightly in aluminum foil, and roast for 30 to 35 minutes until soft. Let cool slightly.
While the garlic roasts, toss the quartered potatoes with the remaining 2 tablespoons of olive oil, salt, pepper, and paprika on a large baking sheet. Spread them into a single layer.
Roast the potatoes for 20 minutes.
Squeeze the soft, roasted garlic pulp out of the skins into a small bowl. Mash the garlic with the melted butter.
Remove the potatoes from the oven. Drizzle the garlic butter mixture evenly over the potatoes and toss gently to coat.
Return the potatoes to the oven and roast for another 15 minutes.
Sprinkle the 1/2 cup of Parmesan cheese over the potatoes. Return to the oven for a final 5 to 10 minutes, or until the cheese is melted and the potatoes are golden brown and crispy.
Toss once more before serving and sprinkle with extra Parmesan if desired.
Notes
For extra crispiness, use a heavy baking sheet and avoid overcrowding the potatoes; use two sheets if necessary.
Use freshly grated Parmesan cheese for the best melting and flavor.
If you do not wish to roast a whole head of garlic, substitute with 1 tablespoon of pre-minced garlic mixed into the butter, but add it during the last 10 minutes of cooking to prevent burning.
