1 pound breakfast sausage, casings removed
1.5 pounds Yukon Gold potatoes, diced into 1/2-inch pieces
1 medium yellow onion, chopped
1 red bell pepper, chopped
1 teaspoon garlic powder
1/2 teaspoon dried thyme
Salt and black pepper to taste
6 large eggs
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
In a large bowl, combine the diced potatoes, onion, bell pepper, garlic powder, thyme, salt, and pepper. Toss to coat evenly.
Spread the seasoned vegetables onto the prepared baking sheet in a single layer.
Bake for 15 minutes until the potatoes begin to soften.
While the vegetables bake, cook the sausage in a skillet over medium heat, breaking it up with a spoon until fully browned. Drain off excess grease.
Remove the baking sheet from the oven. Scatter the cooked sausage evenly over the potatoes and vegetables.
Use a spoon to create six small wells among the sausage and potato mixture on the pan.
Carefully crack one egg into each well.
Return the pan to the oven and bake for an additional 10 to 14 minutes, or until the egg whites are set and the yolks reach your desired doneness.
Remove from the oven. Sprinkle the shredded cheddar cheese over the top and let it melt for 2 minutes.
Garnish with fresh parsley before serving directly from the pan or dividing into bowls.
Notes
For meal prep, you can cook the sausage and potato mixture completely ahead of time. Store it in the refrigerator for up to 3 days. When ready to eat, reheat the mixture and then add the eggs and bake as directed.
If you prefer crispier potatoes, toss them with 1 tablespoon of oil before spreading them on the pan.
You can substitute the cheddar cheese with Monterey Jack or pepper jack for a different flavor.
