These savory zucchini cheese muffins are perfect for a satisfying breakfast or snack. They’re packed with fresh zucchini, your favorite cheese, and herbs for a delicious bite.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup shredded cheddar cheese or crumbled feta cheese
  • 2 tablespoons chopped fresh chives or parsley
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil or melted butter
  • 1/4 cup sour cream or plain yogurt

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  3. Add the grated zucchini, cheese, and herbs to the dry ingredients. Toss gently to coat the zucchini and herbs with the flour mixture.
  4. In a separate medium bowl, whisk together the eggs, milk, oil, and sour cream until well combined.
  5. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Make sure to squeeze as much moisture as possible from the grated zucchini to prevent soggy muffins.
  • Feel free to experiment with different cheeses and herbs like dill or basil.
  • These muffins can be stored in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days.
