4 boneless, skinless chicken breasts (about 6 oz each)
1 cup fresh strawberries, hulled and quartered
1/4 cup balsamic vinegar
2 tablespoons olive oil, divided
1 tablespoon brown sugar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small red onion, thinly sliced
5 ounces fresh spinach
Instructions
Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
In a small saucepan, combine the quartered strawberries, balsamic vinegar, brown sugar, and Dijon mustard. Bring the mixture to a simmer over medium heat. Cook for 5 to 7 minutes, stirring occasionally, until the strawberries soften slightly and the sauce thickens into a light glaze. Remove from heat.
In a bowl, toss the chicken breasts with 1 tablespoon of olive oil, salt, and pepper. Place the seasoned chicken on one side of the prepared baking sheet.
Toss the sliced red onion with the remaining 1 tablespoon of olive oil and spread them on the other side of the baking sheet.
Bake for 15 minutes.
Remove the sheet pan from the oven. Brush half of the strawberry balsamic glaze over the chicken breasts. Return the pan to the oven and bake for another 5 to 8 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Remove the pan from the oven. Place the fresh spinach directly onto the hot sheet pan around the chicken and onions. Drizzle the remaining strawberry balsamic glaze over the chicken and onions. The residual heat will wilt the spinach slightly.
Serve the chicken immediately over the wilted spinach and roasted onions.
Notes
For a thicker glaze, simmer the strawberry mixture for a few extra minutes until it coats the back of a spoon.
You can substitute red onion with shallots if preferred.
If you prefer the strawberries cooked longer, toss them with the chicken before the first bake, reserving some glaze for drizzling after cooking.
