1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 lb broccoli florets
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 zucchini, chopped
1 red onion, cut into wedges
3 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, Italian seasoning, garlic powder, salt, and pepper.
In the same bowl, add the broccoli, bell peppers, zucchini, and red onion. Drizzle with the remaining 2 tablespoons of olive oil and season with salt and pepper. Toss to coat the vegetables evenly.
Spread the seasoned chicken and vegetables in a single layer on a large baking sheet.
Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
