Make crispy tofu and vegetables easily on one sheet pan using a sweet and tangy honey mustard glaze. This recipe requires pressing the tofu for the best texture.

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 1 tablespoon cornstarch
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large sweet potato, peeled and cubed
  • 2 cups broccoli florets
  • 2 tablespoons olive oil, divided
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey (or maple syrup for vegan)
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon apple cider vinegar
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Press the tofu for at least 30 minutes to remove excess water. Cut the pressed tofu into 1-inch cubes.
  3. In a medium bowl, toss the tofu cubes with cornstarch, smoked paprika, salt, and pepper until evenly coated.
  4. In a small bowl, whisk together the Dijon mustard, honey, soy sauce, apple cider vinegar, and minced garlic to create the glaze. Set aside half of the glaze for later.
  5. Toss the sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper. Spread them on one side of the prepared baking sheet.
  6. Toss the coated tofu cubes with the remaining 1 tablespoon of olive oil. Place the tofu on the other side of the baking sheet.
  7. Roast for 15 minutes.
  8. Remove the pan from the oven. Add the broccoli florets to the pan, tossing them lightly with any oil remaining on the pan.
  9. Brush the tofu cubes generously with half of the reserved honey mustard glaze.
  10. Return the pan to the oven and bake for another 10 to 15 minutes, or until the tofu is golden brown and crispy and the vegetables are tender.
  11. Remove from the oven. Drizzle the remaining half of the glaze over the tofu and vegetables before serving immediately.

Notes

  • Pressing the tofu is essential for achieving a crispy exterior; use a tofu press or heavy objects wrapped in paper towels.
  • If you prefer a stickier glaze, you can briefly warm the reserved glaze in a small saucepan until slightly thickened before drizzling.
  • For extra crispiness, you can toss the tofu in the cornstarch mixture twice.
