1 pound fresh green beans, trimmed
2 tablespoons olive oil, divided
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large lemon, cut into wedges
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
Toss the trimmed green beans with 1 tablespoon of olive oil, salt, and pepper directly on the prepared baking sheet. Spread them into a single layer.
In a shallow dish, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Mix well.
Pat the tilapia fillets dry with paper towels. Brush the tops of the fillets lightly with the remaining 1 tablespoon of olive oil.
Press the oiled side of each tilapia fillet firmly into the Parmesan mixture to create an even crust.
Place the crusted tilapia fillets on the baking sheet among the green beans, leaving a little space between them.
Bake for 12 to 15 minutes, or until the fish is opaque throughout and flakes easily with a fork, and the green beans are tender-crisp.
