1.5 lb boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
1 lb Brussels sprouts, trimmed and halved
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 lemon, cut into wedges (for serving)
Instructions
Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
In a small bowl, combine the melted butter, minced garlic, Italian seasoning, salt, and pepper. Set aside.
In a large bowl, toss the Brussels sprouts with the olive oil, a pinch of salt, and pepper until lightly coated. Spread the sprouts in a single layer on one half of the prepared baking sheet.
Add the chicken pieces to the empty half of the baking sheet. Pour half of the garlic butter mixture over the chicken and toss to coat evenly.
Roast for 15 minutes.
Remove the pan from the oven. Drizzle the remaining garlic butter mixture over the Brussels sprouts and toss them gently on the pan.
Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the Brussels sprouts are tender and slightly browned.
Serve immediately with fresh lemon wedges.
Notes
For crispier sprouts, ensure they are not overcrowded on the pan; use two pans if necessary.
If using chicken breasts, cut them into uniform pieces so they cook at the same rate as the sprouts.
You can substitute broccoli florets or small potato wedges for half of the Brussels sprouts.
