4 salmon fillets (about 6 oz each)
1 large head of broccoli, cut into florets
2 tablespoons olive oil
3 tablespoons honey
2 tablespoons harissa paste
1 tablespoon lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the honey, harissa paste, and lemon juice to create the glaze.
Place the broccoli florets on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, and season with half of the salt and pepper. Toss to coat.
Place the salmon fillets on the other side of the baking sheet. Brush the tops of the salmon generously with half of the honey harissa glaze. Season the salmon lightly with the remaining salt and pepper.
Bake for 12 minutes.
Remove the pan from the oven. Brush the salmon with the remaining glaze. Gently toss the broccoli.
Return the pan to the oven and bake for another 3 to 5 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp.
Serve immediately.
Notes
For crispier broccoli, you can roast the broccoli alone for 5 minutes before adding the salmon to the pan.
If you prefer a milder spice level, reduce the amount of harissa paste to 1 tablespoon and add 1 teaspoon of paprika.
You can substitute asparagus or green beans for the broccoli if desired; adjust cooking time slightly if using thicker vegetables.
