Make a complete dinner with minimal cleanup using this recipe for lemon pepper seasoned chicken breasts and roasted potatoes cooked on a single sheet pan.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1.5-inch pieces
  • 1.5 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil, divided
  • 2 tablespoons lemon pepper seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 large lemon, thinly sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread the potatoes in a single layer on one half of the prepared baking sheet.
  3. Roast the potatoes for 15 minutes to give them a head start.
  4. While the potatoes roast, prepare the chicken and asparagus. In the same bowl, combine the chicken pieces, trimmed asparagus, remaining 2 tablespoons of olive oil, lemon pepper seasoning, oregano, and garlic powder. Toss until everything is evenly coated.
  5. After the potatoes have roasted for 15 minutes, remove the sheet pan from the oven. Push the potatoes to one side.
  6. Arrange the seasoned chicken and asparagus mixture on the empty side of the sheet pan. Place the thin lemon slices over the chicken and potatoes.
  7. Return the sheet pan to the oven and bake for another 18 to 22 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the potatoes are tender and slightly browned.
  8. Remove from the oven and serve immediately.

Notes

  • For crispier potatoes, ensure they are not overcrowded on the pan during the initial roast.
  • You can substitute broccoli florets or green beans for the asparagus if desired.
  • If your chicken pieces are very thick, cut them slightly smaller to ensure they cook at the same rate as the potatoes.
