1.5 lb rainbow carrots, scrubbed and trimmed
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice (optional, for finishing)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
In a large bowl, combine the trimmed carrots, olive oil, honey, thyme leaves, salt, and pepper. Toss everything together until the carrots are evenly coated.
Spread the coated carrots in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure proper roasting and browning.
Roast for 20 to 25 minutes, turning the carrots halfway through the cooking time. The carrots are done when they are tender when pierced with a fork and slightly caramelized on the edges.
Remove the pan from the oven. If using, drizzle the lemon juice over the hot carrots and toss gently before serving.
Notes
For extra flavor, add 1/2 teaspoon of minced garlic to the coating mixture before roasting.
If your carrots are very thick, cut them in half lengthwise so they cook evenly with thinner carrots.
You can substitute maple syrup for honey if desired.
