A quick, high-protein brownie recipe designed for one serving, perfect for a post-workout snack or healthy dessert.

Ingredients

  • 1 scoop (about 30g) chocolate protein powder
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon almond flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon maple syrup or preferred sweetener
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon unsweetened applesauce or mashed banana
  • 1 tablespoon milk (dairy or non-dairy)
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Combine the protein powder, cocoa powder, almond flour, and baking powder in a microwave-safe mug. Mix well to remove lumps.
  2. Add the maple syrup, vanilla extract, applesauce (or banana), and milk to the dry ingredients.
  3. Stir everything together until a thick batter forms. Do not overmix.
  4. Fold in the chocolate chips, if using.
  5. Microwave on high for 60 to 90 seconds. Cooking time varies based on microwave power; start checking at 60 seconds.
  6. The brownie is done when the edges look set but the center is still slightly soft for a fudgy texture.
  7. Let it cool for a few minutes before eating directly from the mug.

Notes

  • For a fudgier texture, use whey or casein protein powder. Plant-based protein may require slightly more liquid.
  • If you prefer a baked version, mix the batter and bake in a small, oiled ramekin at 350°F (175°C) for 12-15 minutes.
  • Add a pinch of salt to enhance the chocolate flavor.
