A simple and delicious skillet peach cobbler, perfect for a warm summer dessert served with ice cream.

  • 6 cups fresh peaches, sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, nutmeg, and 1/4 teaspoon salt.
  3. Pour the peach mixture into a 10-inch oven-safe skillet.
  4. In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and 1/2 teaspoon salt.
  5. Pour the melted butter and milk into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the batter evenly over the peaches in the skillet.
  7. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let the cobbler cool for a few minutes before serving.
  9. Serve warm with a scoop of vanilla ice cream.

Notes

  • You can use frozen peaches if fresh ones are not available, but thaw them first and drain any excess liquid.
  • Add a splash of bourbon or peach schnapps to the peach mixture for an extra kick.
  • Serve with whipped cream or a dusting of powdered sugar if you don’t have ice cream.
