2 lbs boneless, skinless chicken thighs
1/2 cup honey
1/4 cup soy sauce
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon grated fresh ginger
1 tablespoon cornstarch (optional, for thickening sauce)
2 tablespoons water (optional, for thickening sauce)
Salt and pepper to taste
Instructions
Pat the chicken thighs dry with paper towels. Season with salt and pepper.
In a bowl, whisk together honey, soy sauce, olive oil, minced garlic, and grated ginger.
Place the chicken thighs in the slow cooker.
Pour the honey garlic sauce over the chicken.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
If you prefer a thicker sauce, remove the chicken from the slow cooker. In a small bowl, whisk together cornstarch and water to create a slurry. Stir the slurry into the liquid in the slow cooker. Cook on high for another 15-20 minutes, or until the sauce has thickened.
Serve the chicken thighs with the honey garlic sauce spooned over them.
