- 1 teaspoon active dry yeast
- 1 teaspoon granulated sugar
- 3 cups all-purpose flour, plus more for dusting

- 1 large egg, beaten

- 2 tablespoons coarse salt (for topping)
- For the Beer Cheese:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1/2 cup beer (lager or ale recommended)
- 1 teaspoon mustard powder
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper
- 1 1/2 cups shredded sharp cheddar cheese
- Salt and black pepper to taste
- In a small bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
- In a large bowl, whisk together flour and salt.
- Pour the yeast mixture into the flour mixture and mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
- While the dough rises, prepare the beer cheese. Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and beer until smooth. Bring to a simmer, stirring constantly, until thickened.
- Stir in mustard powder, garlic powder, and cayenne pepper. Reduce heat to low.
- Add shredded cheddar cheese and stir until melted and smooth. Season with salt and pepper. Keep warm.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
