Use your sourdough starter leftovers to make this quick and easy sourdough discard pizza dough. This recipe creates a flavorful, chewy, and crispy crust perfect for weeknight sourdough pizza without a long rise time.

  • 1 cup sourdough discard (unfed starter)
  • 1 cup all-purpose flour
  • 1 teaspoon instant dry yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup warm water (approximately)

Instructions

  1. In a large bowl, combine the sourdough discard, flour, instant yeast, and salt. Mix them together until just combined.
  2. Add the olive oil and slowly pour in the warm water, mixing until a shaggy dough forms. You may need slightly more or less water depending on your discard’s hydration.
  3. Turn the dough out onto a lightly floured surface. Knead for about 5 to 7 minutes until the dough is smooth and elastic. This dough does not require a long proofing time.
  4. Divide the dough in half if you are making two smaller pizzas, or keep it whole for one large pizza. Let the dough rest, covered with a clean towel, for 15 minutes while you prepare your oven and toppings.
  5. Preheat your oven and pizza stone or baking sheet to 475 degrees Fahrenheit (245 degrees Celsius). High heat helps achieve a crispy sourdough discard pizza crust.
  6. Shape the dough to your desired thickness. Since this is a quick recipe, it will stretch easily.
  7. Transfer the dough to parchment paper or a lightly floured pizza peel. Add your sauce and toppings.
  8. Bake for 10 to 15 minutes, or until the crust is golden brown and the cheese is bubbly. Enjoy your homemade pizza crust starter creation!

Notes

  • For a crispier crust, roll the dough thinner. For a chewier sourdough discard crust, leave it slightly thicker.
