1 tablespoon olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (15 ounce) can black beans, rinsed and drained
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
1 cup frozen corn kernels
2 cups vegetable broth
1/2 cup fresh cilantro, chopped (for garnish)
1 lime, cut into wedges (for serving)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic, chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute until fragrant.
Stir in the uncooked rice, coating it with the spices.
Add the rinsed black beans, undrained diced tomatoes with green chilies, frozen corn, and vegetable broth to the pot. Stir everything together.
Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot tightly, and simmer for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed. Do not lift the lid during simmering.
Remove the pot from the heat and let it stand, covered, for 5 minutes.
Fluff the rice mixture gently with a fork. Stir in half of the fresh cilantro.
Serve immediately with lime wedges and the remaining cilantro on the side.
Notes
For a richer flavor, substitute water with chicken broth for the vegetable broth.
If you prefer a spicier dish, add 1/4 teaspoon of cayenne pepper with the other spices.
This recipe works well served in bowls topped with avocado slices or a dollop of sour cream.
