- 1.5 lbs salmon fillet, skin removed and cut into 1-inch cubes
- 1/2 cup all-purpose flour
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, lightly beaten
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (or to taste)
- 1 teaspoon lime juice
- 1 tablespoon chopped fresh cilantro for garnish
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix the flour, paprika, garlic powder, salt, and pepper.
- Dip each salmon cube first into the beaten egg, letting excess drip off, then dredge thoroughly in the flour mixture, pressing lightly to coat.
- Place the coated salmon bites on the prepared baking sheet in a single layer.
- Bake for 12 to 15 minutes, or until the salmon is cooked through and the coating is lightly golden and crisp.
- While the salmon bakes, prepare the sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth.
- Remove the baked salmon bites from the oven.
- In a clean bowl, gently toss the hot salmon bites with about half of the Bang Bang sauce until coated. Add more sauce if desired.
- Serve immediately, garnished with fresh cilantro.

- For extra crispiness, you can spray the coated salmon lightly with cooking spray before baking.
