1 round loaf of sourdough or crusty bread
1 tablespoon olive oil
1 cup chopped yellow onion
2 cloves garlic, minced
10 ounces frozen chopped spinach, thawed and squeezed dry
14 ounces canned artichoke hearts, drained and chopped
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1/2 cup grated Parmesan cheese, plus more for topping
1/2 cup shredded mozzarella cheese
Salt and freshly ground black pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
Cut off the top of the bread loaf and scoop out the soft interior, leaving a sturdy bowl. You can cube the scooped-out bread for dipping.
Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
In a large bowl, combine the cooked onion and garlic, squeezed spinach, chopped artichoke hearts, cream cheese, sour cream, mayonnaise, Parmesan cheese, and mozzarella cheese.
Mix everything together until well combined and creamy. Season with salt and pepper to your liking.
Spoon the spinach artichoke dip mixture into the hollowed-out bread bowl. Sprinkle with extra Parmesan cheese.
Place the filled bread bowl on a baking sheet and bake for 20-25 minutes, or until the dip is hot and bubbly and the bread is lightly toasted.
Serve immediately with the reserved bread cubes or your favorite dippers.
Notes
For an extra cheesy topping, add a bit more mozzarella or Parmesan cheese before baking.
If you don’t have sourdough, any crusty round bread will work.
Make sure to squeeze out as much moisture as possible from the spinach to prevent a watery dip.
