Starbucks Copycat Sous Vide Egg Bites

Make creamy, custardy egg bites at home that taste just like the Starbucks version using a simple water bath method.

Ingredients

  • 1 cup whole milk
  • 1 cup heavy cream
  • 6 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyere cheese
  • 1/2 cup cooked, crumbled bacon

Instructions

  1. Preheat your oven to 325°F (160°C). Bring water to a simmer for the water bath.
  2. In a blender, combine the whole milk, heavy cream, eggs, salt, and pepper. Blend on medium speed for about 30 seconds until completely smooth. Do not over-blend, or you will incorporate too much air.
  3. Divide the shredded Gruyere cheese and crumbled bacon evenly among the wells of a standard 12-cup muffin tin.
  4. Carefully pour the egg mixture over the cheese and bacon in each muffin cup, filling them about three-quarters full.
  5. Place the muffin tin inside a larger roasting pan.
  6. Carefully pour the hot water into the roasting pan until the water level reaches halfway up the sides of the muffin tin cups. This creates the water bath.
  7. Bake for 25 to 35 minutes, or until the centers are just set and no longer jiggly.
  8. Remove the muffin tin from the water bath and let it cool on a wire rack for 10 minutes.
  9. Run a thin knife around the edge of each egg bite to loosen, then carefully remove them.

Notes

  • For the best texture, strain the blended egg mixture through a fine-mesh sieve before pouring it into the muffin cups.
  • If you do not have a large roasting pan, you can use a deep baking dish for the water bath.
  • Store cooled egg bites in an airtight container in the refrigerator for up to four days.
  • Reheat in the microwave for 30 to 45 seconds or in an air fryer at 350°F for 3-5 minutes for a slightly crispier exterior.
