  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 oz dried egg noodles or ramen noodles
  • 2 tablespoons vegetable oil
  • 6 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup soy sauce (low sodium)
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon dark soy sauce (for color)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup water or chicken broth
  • 1 tablespoon cornstarch
  • 2 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Cook the noodles according to package directions. Drain them, rinse with cold water to stop cooking, and set aside.
  2. In a small bowl, whisk together the water or broth and cornstarch until smooth. Set this slurry aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  4. Reduce the heat to medium. Add the minced garlic and grated ginger to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  5. Add the soy sauce, honey, rice vinegar, dark soy sauce, sesame oil, and red pepper flakes (if using) to the skillet. Bring the mixture to a simmer.
  6. Pour the cornstarch slurry into the simmering sauce while stirring constantly. Continue stirring until the sauce thickens significantly and becomes glossy and sticky, about 1 minute.
  7. Return the cooked chicken to the skillet. Toss well to coat the chicken completely in the sticky sauce.
  8. Add the cooked noodles to the skillet. Toss everything together until the noodles are evenly coated with the sauce and heated through.
  9. Serve immediately, garnished with sliced green onions and sesame seeds.

Notes

  • To achieve the stickiest sauce, ensure you simmer the sauce after adding the cornstarch slurry until it visibly coats the back of a spoon.
  • Use chicken thighs for extra moisture, but breast meat works if you prefer.
  • For a deeper flavor, let the cooked chicken rest in the sauce for one minute before adding the noodles.
