1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
8 oz dried egg noodles or ramen noodles
2 tablespoons vegetable oil
4 cloves garlic, minced
1 inch ginger, grated
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon dark soy sauce (for color)
1 teaspoon sesame oil
1/4 cup water or chicken broth
1 tablespoon cornstarch
2 green onions, sliced (for garnish)
1 teaspoon sesame seeds (for garnish)
Instructions
Cook the noodles according to package directions. Drain them and set aside.
In a small bowl, whisk together the water or broth and cornstarch to create a slurry. Set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Add the minced garlic and grated ginger to the skillet. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Reduce the heat to medium. Add the soy sauce, honey, rice vinegar, dark soy sauce, and sesame oil to the skillet. Stir well.
Bring the sauce to a simmer. Whisk the cornstarch slurry one more time and pour it into the simmering sauce. Stir constantly until the sauce thickens and becomes sticky, about 1 minute.
Return the cooked chicken to the skillet. Toss to coat the chicken completely in the sticky garlic sauce.
Add the cooked noodles to the skillet. Toss everything together until the noodles are fully coated with the sauce and heated through.
Serve immediately, garnished with sliced green onions and sesame seeds.
Notes
For extra flavor, marinate the chicken briefly in 1 teaspoon of soy sauce before cooking.
If you prefer a spicier sauce, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
Use thick ramen or udon noodles to best hold the sticky sauce.
