Make this large batch punch combining strawberry, pineapple, and coconut flavors for your next gathering. This recipe includes options for both alcoholic and non-alcoholic preparation.

Ingredients

  • 1 cup white rum (optional)
  • 1 (12 ounce) can cream of coconut
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 cup pineapple juice
  • 1 cup frozen strawberries
  • 1 cup fresh or frozen strawberries, sliced
  • 4 cups lemon-lime soda or club soda, chilled
  • Ice cubes

Instructions

  1. Combine the rum (if using), cream of coconut, crushed pineapple, pineapple juice, and the 1 cup of frozen strawberries in a large blender.
  2. Blend until smooth. If the mixture is too thick, add a small amount of extra pineapple juice.
  3. Pour the blended mixture into a very large punch bowl or beverage dispenser.
  4. Just before serving, gently stir in the 4 cups of chilled lemon-lime soda or club soda.
  5. Add the sliced fresh or frozen strawberries to the punch bowl for garnish and flavor.
  6. Serve immediately over ice.

Notes

  • For a non-alcoholic version, omit the rum and add 1 cup of water or extra pineapple juice to the blender mixture.
  • To prepare ahead, blend the base mixture (steps 1 and 2) and store it in the refrigerator for up to 24 hours. Do not add the soda until right before serving.
  • Freeze some strawberries ahead of time to use in place of ice cubes to keep the punch cold without diluting the flavor.
