Classic Ground Beef Stuffed Bell Peppers

A simple recipe for baked bell peppers filled with ground beef, rice, and tomato sauce.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup cooked white rice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
  4. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  5. Stir in the diced tomatoes, cooked rice, oregano, salt, and pepper. Cook until heated through, about 5 minutes.
  6. Spoon the meat mixture evenly into the hollowed-out pepper halves.
  7. Pour the beef broth into the bottom of the baking dish around the peppers.
  8. Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
  9. Remove the foil, sprinkle the tops with mozzarella cheese if using, and bake uncovered for another 10 to 15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • To prevent soggy peppers, you can lightly pre-bake the pepper halves for 10 minutes before adding the filling.
  • For a gluten-free option, substitute the white rice with quinoa or cauliflower rice.
  • If you prefer a less tomato-heavy flavor, reduce the amount of diced tomatoes and increase the beef broth slightly.
