Enjoy these hearty stuffed bell peppers filled with flavorful ground turkey and sweet corn. It’s a delicious and simple one-pan meal perfect for a weeknight dinner.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked corn kernels
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet over medium heat, cook the ground turkey until browned. Drain off any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in the cooked corn, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  6. Spoon the turkey and corn mixture evenly into the prepared bell peppers.
  7. Place the stuffed peppers in a baking dish.
  8. Cover the baking dish with foil and bake for 30 minutes.
  9. Remove the foil, sprinkle with cheese if desired, and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • You can substitute ground chicken or lean beef for the ground turkey.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
