You need to try these fudgy sweet potato brownies! They are moist, chocolatey, and secretly nutritious. This easy recipe gives you a guilt-free dessert that satisfies your chocolate cravings.

Ingredients

Scale
  • 1 cup cooked and mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup melted coconut oil or butter
  • 1 cup maple syrup or honey (for naturally sweetened brownies)
  • 2 large eggs (or flax eggs for vegan sweet potato treat)
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour (or regular flour for non-gluten free brownies idea)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mix the mashed sweet potato, melted coconut oil, and maple syrup until smooth.
  3. Whisk in the eggs and vanilla extract until the mixture is well combined.
  4. In a separate bowl, whisk together the cocoa powder, almond flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips, if you are using them.
  7. Pour the batter into your prepared pan and spread evenly.
  8. Bake for 25 to 30 minutes. The edges should look set. A toothpick inserted near the center should come out with moist crumbs, not wet batter, for a fudgy texture.
  9. Let the brownies cool completely in the pan before cutting. This step is key for the fudgiest texture!
  10. Cut into squares and enjoy your wholesome chocolate snack.

Notes

  • For a vegan sweet potato treat, substitute the eggs with two flax eggs (mix 2 tablespoons ground flaxseed with 6 tablespoons water and let sit for 5 minutes).
  • If you want a richer chocolate flavor, add 1 teaspoon of instant espresso powder to the dry ingredients.
  • Cooling time is important! For the best, fudgiest results, chill the brownies in the refrigerator for at least an hour after they have cooled to room temperature.
  • This recipe works well for fall dessert recipes inspiration.
