A traditional Southern sweet potato cobbler featuring tender, spiced sweet potatoes under a simple, buttery crust.

  • 3 large sweet potatoes (about 2 pounds)
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted, plus 2 tablespoons for topping
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. Peel and boil the sweet potatoes until very tender, about 20 minutes. Drain them well.
  3. Mash the cooked sweet potatoes until smooth. You should have about 2 cups of mashed sweet potato.
  4. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, 1/2 cup melted butter, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until smooth.
  5. Stir in the milk until just combined. Pour this sweet potato mixture into the prepared baking dish.
  6. In a separate medium bowl, whisk together the flour and baking powder. Cut in the 1/4 cup cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Sprinkle the flour mixture evenly over the sweet potato filling. Do not stir it in.
  8. Dot the top of the flour layer with the remaining 2 tablespoons of melted butter.
  9. Bake for 40 to 45 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let the cobbler cool slightly before serving warm.

Notes

  • For a richer flavor, substitute half of the granulated sugar with dark brown sugar.
  • You can use canned sweet potato puree if you prefer not to boil fresh potatoes, using about 2 cups of puree.
  • Serve this warm dessert with vanilla ice cream or whipped cream.
