A simple, hearty breakfast casserole using tater tots as the base, layered with sausage, eggs, cheese, and vegetables.

  • 1 (32 ounce) bag frozen tater tots, thawed slightly
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 10 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Arrange the slightly thawed tater tots in an even layer across the bottom of the prepared baking dish.
  3. In a skillet, cook the breakfast sausage until done. Drain off any excess grease.
  4. In the same skillet, sauté the chopped onion and green bell pepper until soft, about 5 minutes.
  5. Spread the cooked sausage, sautéed vegetables, and 1 cup of the shredded cheese evenly over the tater tot layer.
  6. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  7. Pour the egg mixture slowly and evenly over the sausage, vegetable, and cheese layers.
  8. Sprinkle the remaining 1 cup of shredded cheese over the top.
  9. Bake for 45 to 55 minutes, or until the eggs are set and the top is golden brown.
  10. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
  • You can substitute bacon or ham for the sausage.
  • If you prefer a crispier top, you can add the final layer of cheese during the last 10 minutes of baking.
