A rustic and impressive Tomato Basil Galette, perfect for a seasonal vegetarian main or appetizer. This free-form tart features ripe summer tomatoes, fresh basil, and cheese baked in a flaky crust.

  • 1 sheet puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2-3 ripe tomatoes, thinly sliced
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon fresh basil leaves, chopped
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet onto the prepared baking sheet.
  3. In a small bowl, mix the olive oil, minced garlic, salt, and pepper. Brush this mixture evenly over the puff pastry, leaving a 1-inch border.
  4. Arrange the sliced tomatoes over the olive oil mixture.
  5. Sprinkle the mozzarella and Parmesan cheeses over the tomatoes.
  6. Fold the border of the puff pastry up and over the edges of the filling, pleating as you go to create a rustic crust.
  7. Brush the folded pastry border with the beaten egg wash.
  8. Bake for 20-25 minutes, or until the crust is golden brown and puffed, and the tomatoes are tender.
  9. Sprinkle fresh chopped basil over the galette before serving.

  • Ensure your puff pastry is fully thawed but still cold for the best flaky results.
  • Slice tomatoes to a uniform thickness for even baking.
  • Feel free to add other herbs like oregano or thyme with the basil.
