3 large very ripe bananas, mashed
1/2 cup plant milk (soy or almond work well)
1/3 cup melted coconut oil or neutral oil
1/2 cup packed light brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour (or use 1:1 gluten-free blend)
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup mix-ins (optional: vegan chocolate chips or chopped walnuts)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan, or line it with parchment paper.
In a large mixing bowl, mash the ripe bananas until mostly smooth.
Add the plant milk, melted oil, brown sugar, and vanilla extract to the bowl. Whisk these wet ingredients together until combined.
In the same bowl, add the flour, baking soda, cinnamon, and salt. Use a spatula to gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few streaks of flour are acceptable.
If using, fold in the chocolate chips or nuts now.
Pour the batter into your prepared loaf pan and spread it evenly.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.
Notes
For the moistest results, use bananas that are heavily spotted or almost black.
To make this recipe naturally sweetened, substitute the brown sugar with 1/2 cup of maple syrup, reducing the plant milk by 2 tablespoons.
If you want a slightly healthier version, replace 1/2 cup of the all-purpose flour with oat flour.
If your bread browns too quickly on top, loosely tent it with aluminum foil for the last 15 minutes of baking.
